How To Make Pierogi’s



Do you have a favorite family recipe? Today's my dad's birthday 🎉 so I'll share his and my favorite food. What’s your ancestry? I’m part German, Irish, Polish & Austrian that I know of. My family has lived in Pittsburgh, PA for generations though. My grandma is mostly Polish and my dad & my favorite food she would always make is homemade Pierogi’s (also known as Polish Dumplings). I have fond memories of making pierogi’s with my grandma, grandpa and sister. We couldn't wait to feed them to my dad for his birthday. You have to roll the dough with a lot of force and we always needed a lot of help from my grandpa. It was such fun family bonding time and felt so good to make others happy with delicious food! Now it’s also one of Caleb’s favorite meals, so I make it for him on special occasions. Link in bio under blog for the family recipe. Happy birthday to my awesome daddy! Wish I could share this meal with him, but since he lives in Pittsburgh my mom is sweet enough to make him some. What's your favorite recipe? Would love to hear about it! For Dough: Dough - 4 1/2 cups flour (I use gluten free dough) 2 medium eggs or 1 large egg 1 cup of water (adjust to texture of dough) Pinch of salt 1 or 2 tablespoons oil (I use coconut oil) For Inside: 8 ounces cottage cheese (Some people use mashed potatoes instead, but our family loves it with the cottage cheese) Mix dough ingredients together until is like pastry dough. Let sit at least 1/2 hour roll dough on floured surface about 1/8 inch thick Cut out 3 inch circles (or squares) Place 1 teaspoon of filling on each round, fold over and press the edges together firmly use fingers or a fork to seal the edges. Drop pierogi’s into boiling water, a few at a time. Leave in water until they rise to top (10 min) Lift out and let drain and cool *When closing pierogis wet inside edge and press fork on both sides Fry in a little butter or oil until brown, eat hot. Add salt to taste I always have green beans as a side dish and Caleb always likes to add extra cottage cheese on top which tastes delicious!! Let me know if you try it or have any questions!
